Phytase

Phytate widely exists in kinds of plant feedstuff and it is a full cyclic structure of phosphoinositide. Its scientific name is inositol-hexaphosphate IP6, the chemical formula is C6H18O24P6 with 660.8kDa. It has so strong chelating capacity that it can strong combine with Cu2+,Zn2+,Mn2+,Ca2+ into the steady chelate complex by the six phosphate groups. High content of phosphate acid reduces the utilization of Calcium to 35% and Zinc to 44.1%. It's the phytate which mainly exists in plant feed. Due to the lack of phytase, phytate can not be effectively utilized by monogastric animals to meet their nutritional request. For example, the pigs can only use 12% and 23% of phosphorus in corn and soybean meal respectively.1.
